These are great for parties or game day. Use store bought pizza dough to help cut down on prep time. Serve hot with pizza sauce or marinara for dipping
Preheat oven to 350. Recipe only makes 8 muffins, if using a standard 12 cup muffin pan, only grease the inside of 8 cups with cooking spray.
Thaw the spinach according to package directions. Squeeze as much liquid as you can from the spinach.
Heat the oil in a nonstick saute pan over medium heat. When hot, add the garlic and cook for 1 minute. Add the spinach and cook until the spinach is heated through, about 3-4 minutes. Transfer the spinach to a mixing bowl and cool. Toss in the feta cheese and season with salt and pepper to taste.
Roll out the pizza crust and spread the spinach mixture in an even layer of the dough. Starting from a long end, roll the dough into a long cylinder (spinach may spill our from the side). Cut the roll crosswise into 1 inch wide pieces and place in the prepared muffin cups. Sprinkle mozzarella cheese over the tops of the muffins.
Bake until golden on top, about 20 minutes. Serve warm with pizza or marinara sauce.
