These are great Game Day or Party appetizers. They are still good at room temperature. And the best part, you can make them ahead of time as they go into the oven frozen.
*Cook spinach in saucepan according to package directions and drain very well
*Return spinach to stove top and pour in beaten eggs and mix very well
*Add butter and cheese to spinach, stir
*Sprinkle stuffing mix over mixture and cook just until crumbs disappear
*Season with salt and pepper
*Roll into walnut-size balls, place on a cookie sheet and freeze
*Bake frozen on a cookie sheet at 350 for 20 to 30 minutes
Note: If you find the balls hard to roll with the warm mixture, try refrigerating for a little while then roll.
