Savory, Greek inspired pie - good for dinner!
For crust:
In a food processor, combine 1 1/2 cups of flour and salt, if using unsalted butter. Pulse 3-4 times to combine.
Add butter cubes to food processor (make sure they are very cold). Mix for 15 seconds until combined with flour. Scrape down sides of food processor and add last 1 cup of flour. Pulse 5-7 times until combined.
Pour butter/flour mixture into a medium size bowl and add 4 tablespoons of ice water. Mix with spatula (folding on itself). Continue to add ice water, 1 tablespoon at a time, until dough holds together.
Divide dough into two and wrap tightly in plastic wrap. Place in refrigerator for at least 1 hour, up to three days.
For filling:
Preheat oven to 350 degrees.
Heat a large skillet or sauce pan over medium heat. Add three tablespoons of butter and melt. Sauté onion and garlic for approx. 6 minutes. Add spinach to pan and sauté until wilted. Take off stove to cool.
Combine Greek yogurt, mozzarella, and beaten eggs in a medium bowl. Add onion/spinach mixture and combine.
Assembly:
Prep your springform pan by lightly coating in butter.
Roll 1 piece of dough out large enough to cover bottom and sides of a springform pan. Place pie crust in pan.
Place filling inside of dough.
Roll out 1 piece of dough, large enough to cover the top of the pie. Place on top of pie, and crimp edges together.
Bake at 350 for 30 minutes. Raise temperature to 400 and bake for an additional 15 minutes, or until the pie does not "jiggle" more than a half an inch when you shake it.
Take out of oven and let cool for at least 10 minutes (preferably 15). Slice and serve!
