we just call it "Grinch Soup', and it's a favorite, even with my picky eaters who hate mushrooms and spinach!
using a a large saucepan, wilt spinach in 2-3 T broth
in a separate pan, fry mushrooms in olive oil or butter with flour, curry powder, salt & pepper
puree in blender with remaining broth
return to large saucepan and combine with plain yogurt. (If you use non-fat, the soup will separate--YUCK!) You may substitute cream instead if you are feeling skinny. It's delicious, but oh, so bad for you!
Serve with cooked, chopped bacon as a garnish. (I wouldn't call the amount my family use a garnish, it's more like a dump truck load...)
If your kids don't see you prepare this, they will NEVER KNOW it has mushrooms and spinach in it! Bwahahahaha!
