Thick pea soup on a cold day! A perfect use for that ham bone!

In large pot add stock, peas, celery, onion, bay leaf and pepper. Boil moderately for 10 minutes and them simmer for 40 min.
Add thyme, salt and cayenne and simmer for another 20 min.
Mash some of the peas to make a thick soup with a hand masher or it can be pureed if desired. Add diced ham and bring back to simmer.
