2. Oven at 338 F
3. Butter and flour the pan
4. Eggs, sugar, salt and lemon zest in stand mixer
5. Beat eggs until pale yellow (15-20 minutes on medium/high speed). To test, let small amount of batter fall into bowl. If it sits on top, it is ready.
6. Sift flour on top, little at a time and fold gently with wooden spoon
7. Pour batter on pan
8. Bake for 40 mins or until toothpick in center comes out clean
9. Turn oven off but leave cake inside with wooden spoon at door for 5-10 mins.
10. Remove cake and let it cool for another 10 mins
