This is not a loaf that makes great sandwiches. It tastes best as buttered toast.
In a large pot:
-Cook like porridge. Bring 2 cups of water to a boil and add salt and oatmeal. Cook according to the oatmeal package directions. Remove from burner and let cool slightly
In a glass measuring cup:
-Combine ? cup warm water, sugar and yeast. Cover with wax paper and let yeast proof while the oatmeal cools slightly (10-15 minutes). You don''t want to add the yeast to the oatmeal too soon as the heat will kill the yeast.
-Once the oatmeal has cooled slightly add the molasses and stir.
-Add the yeast mixture.
-Stir in the flour. Let rise in a bowl (about 1 ? hours). Then divide in half and place in 2 greaded loaf pans.
-Let rise in pans in a warm place for about 1 ? hours.
-Bake at 375 for 10 minutes, reduce the oven to 350 and continue to bake another 30-45 minutes.
-Remove from pans and put on cooling racks. Brush the tops with butter or margarine.
