Butternut squash with blue cheese and sage.
Preheat oven to 400?
Cook butternut squash (either peel and cube it and steam covered until tender or cut in half and bake in oven skin side up then peel and cue after it is tender)
Place bread in food processor and pulse until coarse cumbs. Transfer to a bowl and add 2 tsp oil, toss to combine.
Heat remaining 2 tsp oil in a large nonstick skillet. Add sliced onion and saute until tender.
Put onion, squash, sage, salt, and pepper in a large bowl, toss to combine.
Put into an 11x7" baking dish coated with cooking spray.
Bake at 400? for 20 minutes.
Sprinkle blue cheese evenly over squash mixture and sprinkle with break crumbs. Bake an additional 10 minutes until the cheese is melted and crumbs are golden brown.
