Steak Au Poivre
Beef:
Combine both peppers and kosher salt in a stainless bowl. Coat the beef with olive oil, turn in pepper mixture to coat. Sear beef to medium rare in a large cast iron over medium heat. Set aside, reserving pan and juices.
Sauce:
1.Keep some of fat in skillet, add shallots and cook over medium heat, stirring frequently until translucent
2.Add cognac, scraping up brown bits in bottom of pan and simmer until most of liquid has evaporated
3. Add beef jus and simmer until slightly reduced
4. Stir in cream and simmer until sauce has reduced and thickened enough to coat the back of a spoon
