Super quick and easy steak that makes a wonderful sandwich
Toast the pine nuts and set aside.
Remove the fat from the rump, finely chop and add to the pan frying until crisp. Set aside.
Fry the steak as you like it. Rest the steak.
Spread the pesto on a chopping board . Scatter half the pine nuts over the pesto
Slice the steak and layer up with the rocket and Parmesan
Serve with crusty bread.
