Heat butter and oil in pan on medium high high heat, once hot, add the onion. After about 10 minutes, reduce heat to low and add a pinch of salt and brown sugar. Continue to cook until caramelized.
Season Steak with AP 30-60 minutes prior to cooking. Bring to room temp.
Heat pan on medium heat olive oil. Sear steak 2-3 minutes per side depending on thickness. After the first flip, add a few TBSP butter, garlic and herb of choice, Start basting steak.
Remove from heat when desired temp is reached. Let rest.
Butter top and bottom bun of ciabatta and toast on pan until dark brown, nice and crispy. Set aside.
Build Sammie
Thinly slice steak and place on bottom bun.
Add onions, then gruyere. Melt gruyere with kitchen torch. Add arugula and a liberal helping of sauce. Top with chives. Add a little more sauce to op bun and slap together.
