Suggest a better description1. Cover the rice with 1-2’’ of water and allow to soak at least 4 hours, or preferably overnight.
2. Rinse the rice with cold water. Whisk the rice as the bowl fills with water, pour off the rinse water 3-4 times until the rinse water is much less cloudy than the first rinse. Drain the rice
3. Rinse 1 foot of cheese cloth in cold water.
4. Drape the cheese cloth over the perforated steaming tray.
5. Dump the rice into the center of the tray.
6. Bundle the cheese cloth around the rice from in flattened disk of rice.
7. Steam the rice for 15 - 20 minutes until the grains are softened in the center of the disk.
8. Transfer the rice to a lidded pot or bowl and allow the rice to rest for 15 minutes before serving.
