Chicken thights in sweet chilli sauce.
Put the noodles on a bowl and cover with boiling water, leave to soak for about 4 min and start preparing chicken.
Drain and add sesame oil, take about quarter of noodles and fry in a frying pan to crispen.
Chicken
Put chicken on baking paper and sprinkle with salt and pepper. Add Chinese five spice and coat the chicken well.
Cover with baking paper and tenderise by beating it with rolling pin.
Pour olive oil on a heated frying pan and add the chicken. Fry for about 5 min then turn over and fry for another 5 min.
Add sweet chilli dip and coat the chicken well. Sprinkle sesame seeds over the chicken.
Salad
While chicken is frying cut the watermelon and lay the pieces over the noodles, cut the gem lettuce and add to the salad. Rip the leaves of mint and discard the stalks, sprinkle over salad. Do the same with coriander but keep the stalks for dressing. Cut radish in half and add to the salad. Add the fried noodles to the salad.
Dressing
Add coriander stalks, chilli, ginger, garlic, spring onions, fish sauce, sesame oil, soy sauce and lime juice in the blender and blend. Add the dressing to the salad.
Arrange the chicken on a serving dish and serve.
