1. Take a large skillet or wok and heat 1 tbsp of canola oil in it over medium-high heat.
2. Add mushrooms and fry for 1-2 minutes until they release their juice and become tender. Take a small bowl and pour the mushrooms into it. Set aside.
3.Now increase the heat under the skillet and light brown garlic in the remaining 1 tbsp of canola oil.
4. Add garlic and chicken and cook for 2-3 minutes. Add mushrooms, gluten-free soy sauce, and gluten-free oyster sauce, and cook for 1-2 minutes.
5. Your Stir Fry Chicken with Gluten-free Oyster Sauce is ready! Remove from the heat, and stir in 1 tbsp sesame oil and scallions. Serve hot!
