To prepare the yeast mixture: Put the milk in a round-bottomed bowl, add yeast and 200 g flour. Mix well. Keep aside for 30 minutes or until it turns frothy. Put all the stollen mixture ingredients in a ceramic bowl. Add rum and mix well. Cover with a muslin cloth and reserve at least overnight. (Ideally, the mixture should be reserved for a week.) To prepare the dough: Add butter, sugar, eggs and vanilla essence to the frothy mixture and mix well. Add the remaining flour and knead to a soft dough. Add the stollen mixture and mix until fully incorporated. Put the dough in a greased bowl, cover with a moist muslin cloth and keep in a warm place to prove for 20 minutes. Divide into three equal portions, press each portion gently with the palm into an oval shaped disc approximately 2.5 cm. thick. Then fold breadthwise, leaving about 2.5 cm. from the peripherry. Arrange the loaves on a greased baking tray. Bake in a pre-heated oven at 275 F. for 35 minutes or till done. When cool, soak each loaf in equal quantity of desi ghee (clarified butter) until fully absorbed. Remove and dust with equal quantity of icing sugar. NOTES : Makes 3 loaves
