Frozen strawberry delight as made by Grandma Tenhouse every year
Prepare the crunch mixture:
Mix flour, sugar, butter, and pecans together until crumbly. Spread out on a cookie sheet or jelly roll pan. Bake in an oven at 275 degrees for 45 minutes. Use a fork to break apart and stir mixture occasionally as it bakes. Cool completely.
Prepare the strawberry fluff:
Beat egg whites with a stand mixer until soft peaks form. Gradually beat in sugar, lemon juice, and partially thawed strawberries. Beat mixture for 20 minutes, or until fluff is all but overflowing the mixing bowl. Fold in cool whip with a spatula.
To complete:
Spread 1/2 of the crunch mixture on the bottom of a 10x14 pan. Pour in the strawberry mixture. Sprinkle the remaining crunch mix on top. Freeze several hours until firm. Cut and serve.
Chill your mixing bowl, beaters, and egg whites in order to whip the best egg whites. Also, look for prepackaged frozen strawberries in the freezer section of your grocery store - two 10 oz packages are perfect for this recipe.
