Mix cake and gelatin.
Make a well in center and add strawberries, oil, milk, eggs
Beat on low
Scrap sides then beat high 2 min
Pour batter into cupcake pan. fill to about 1/4 inch from top as they do not rise much and deflate when cooled.
Bake 350 for 15-20min
Mix icing and add lemon. Icing makes alot, enough for 2 batches and then some.
Decorate top with a halved strawberry and some lemon zest
