Wipe mushrooms with damp paper towel. Remove stems from caps. Chop finely.Melt butter in skillet; add mushroom stems, onions, pepperoni and garlic. Saute until tender. Stir in cracker crumbs, cheese, parsley and seasonings; mix well. Stir in broth. Spoon stuffing in caps rounding tops. place in shallow baking dish with 1/4" water in bottom of dish. Bake 325 for 25 mins. uncovered.
