Place the two cheeses and egg yolks in a medium bowl and mix until blended together. Stir in the dried mint and black pepper. Spoon the cheese mixture into the pepper halves. Place on a baking sheet in the oven for 10-12 minutes unti golden brown and bubbling. Serve warm or at room temperature with a green salad.
