Bell peppers stuffed with turkey, black beans, onion, tomato, and mozzarella.
Preheat oven to 350 degrees. Cut off tops of peppers, using a small paring knife, remove seeds and core. Dice remaining pepper tops. Heat olive oil in large skillet, brown turkey and onion together until onion is translucent. Add breadcrumbs, black beans, diced tomato, diced red and yellow pepper, and 1/2 c mozzarella cheese. Mix together gently. In a large microwave safe bowl, add 3T of water and place peppers in bowl. Microwave for approx. 3 minutes until peppers are cooked, but still somewhat firm. Place peppers in a square or round baking dish so they won't tip over. Spoon mixture into peppers, adding any extra around peppers for support. Sprinkle remaining 1/4 cup of cheese on top of peppers. Bake in oven 15-20 minutes or until warmed through. Enjoy!
I also add 2 tsp. garlic to the mixture when I add the beans, etc. Have also made this using reconstituted dried onions, but I do not add those in until after turkey is browned.
