Mix egg and ricotta cheese until smooth. Add in goat cheese, spinach, crumbs, salt, pepper, and thyme. Clean fish and lay out on greased baking dish. Sprinkle with a bit of salt and pepper. Spoon small portion of spinach mix at the widest end of the filet. Roll and secure with a toothpick if necessary. Place with seam side down in greased dish. Sprinkle all rolls with lemon juice and cover dish. Bake at 350 for 25 minutes or until fish is done.
