Slice celery fine, but not sliver thin, chop up onion, and sauté both in a deep pan or stock pan with butter...just enough to sauté.
Add chicken broth, poultry seasoning and parsley; simmer.
While simmering, put herbed seasoning in a large bowl and stir in one can of soup. Whip eggs and stir into the dry.
