Good tasting sugar cookies, with dough that's easy to work with.

Cream butter and sugar just until well mixed; don't over mix.
Mix in vanilla and eggs.
Mix in baking powder.
Mix in flour, two cups at a time. Beat until well mixed, but don't over beat.
Roll out dough until it's between 1/4 & 3/8" thick & cut out shapes with cookie cutter.
Or, roll a tablespoon of dough into a ball and press flat with the bottom of a glass.
Bake at 325F for 12-15 minutes.
Decorate with frosting or for a hard glaze, use a Royal Icing recipe.
Tips:
- Butter should still be cool. Really soft butter will result in dry and crumbly dough.
- Don't refrigerate dough. Dough rolls out better if it's room temperature; and it won't spread very much when baking.
- When before rolling out dough, dust surface with sugar (rather than flour), continue to use sugar to prevent the dough from sticking to the surface and to the rolling pin.
- For crisper cookies, roll the dough thinner and reduce the baking time.
Gluten Free cookies: use exactly the same recipe, substituting the regular flour for Gluten-Free cup-for-cup flour. I use King Arthur Gluten-Free Measure for Measure flour - the dough rolled out nicely, and the cookies were very good; slightly more texture than regular flour (similar to using whole grain flour).
