Mix together corn, beans, dried cranberries, bell pepper and scallions in large mixing bowl.
Whisk together the EVOO, vinegar, parsley, lime zest and lime juice with s&p until well blended. Pour over salad and toss to coat well. Cover bowl with plastic wrap and chill for at least 1 hour before serving. Enjoy!
