Suggest a better descriptionHeat a large nonstick skillet over medium-high heat. Add oil & swirl; saute squashes & shallots & thyme until tender, stirring frequently. Cool mixture slightly.
Combine milk & next 5 ingredients in a large bowl, stirring with a whisk.
Arrange squash mixture evenly over crust, sprinkle with cheese. Pour egg mixture over the cheese.
Bake at 350(F) degrees for 45 minutes or until filling is set. Cool 15 min on wire rack.
You can substitute different cheese, if you like, such as mozzarella.
