Sunday Gravy: A Traditional Italian American sauce comprised of various meats in a rich tomato sauce.
I have done this recipe a few times and it has always proven a hit. Now it is a little spendy since you will be using 5 LBS. OF MEAT! But it does make a TON! This recipe is time consuming, but most of that time will be going to work or goofing off for 8 hours.
* I use a crock pot for this. If you do not have a crock pot, a large stock pot or dutch oven on your stove top will work just fine.
In a lightly oiled skillet, brown all of your sausages. Brown all sides. Remove sausages and pat dry or drain. Put sausages into cooking pot/slow cooker.
Add onions to pan. Stir every other minute until onions are browning. Add tomato paste. Stir every other minute until it starts to caramelize. Add red wine and deglaze. (If using a non-stick pan use plastic or wood spoon.)
Add Garlic and Spices. Cook until fragrant and the smell of alcohol disappears.
You have your Sausages in the pot already. Now take your Pork Ribs and trim any excess fat from the outside. Open and drain your Diced Tomato. Put 1/3 of each Diced Tomato, Tomato Sauce and your Onion Mixture on top of Sausages. Put Pork Ribs in the pot. Put the second third on. Now place your Flank Steak on top of that and put the rest of your wet ingredients on that.
Put your crock pot on low and cook for 8 to 10 hours. (Medium 4 to 5)
If you are using your stove top put on low for 8 to 10 hours. (Medium low for 4 to 5)
After cooking remove all the meat and shred with a couple of forks and cut up the sausages or just split them in half. At this point you can taste the sauce and add any spice or herbs you want. Put meat back in.
Cook up some dried pasta (I use Ziti) and serve it up with shredded Parmesan and bread. Of course it tastes even better after a day in the fridge....will feed you all week.
