Change blade to chop, peel and chunk apples and chop finely in food processor then add to potatoes.
Crack eggs and add to mixture along with brown sugar cinammon. Mix well.
Add enough matzoh meal to bind mixture,
Heat oil in a frying pan. .
Place a spoonful of mixture and flatten down with spoon. Fry till golden brown
Serve with apple sauce.
