Easy to make quiche, substitutions make it pretty healthy!
For the sweet potato crust:
1. Preheat the oven to 400 degrees.
2. Take two small-medium sweet potatoes and remove the skin. Cut into very thin, quarter sized slices.
3. Drizzle the olive oil on the slices, and season with salt and pepper.
4. Arrange the sweet potato slices in a circular 9x9 pan. Cook for 15-20 minutes or until golden brown.
For the quiche filling:
1. While crust is baking, chop onions, mushrooms, and spinach.
2. Use remaining olive oil in a skillet on medium-high heat. Saute onions for 2-3 minutes, then add mushrooms. Saute for another 2-3 minutes, then add spinach. Cook until spinach is slightly wilted.
3. In a bowl, whisk together the eggs and milk. Stir cheese into the egg/milk mixture.
4. Combine vegetables with milk/egg/cheese mixture.
After the crust is prepared:
1. After removing crust from the oven, reduce heat to 325 degrees.
2. Pour the filling onto the sweet potato crust. Sprinkle additional cheese/spinach on top if desired.
3. Once oven is ready, place quiche inside and cook for 15-20 minutes.
4. Remove from oven, let sit for 5-10 minutes before slicing (yield=6-8 slices)
