The tastiest tacos I've had, enough said. They are vegetarian but could also be made vegan easily
Heat the oil
Fry the onion until beginning to soften
Add the peppers and continue to fry for 5 minutes
Add the garlic and chilli along with the paprika and cayenne and cook for 2 minutes
Stir through the tomatoes and sugar
Add the drained beans
Bring to the boil then turn down to a low simmer and cook for 25 minutes season to taste with the lime juice and salt and pepper
Combine the ingredients for the yoghurt sauce
Heat the taco shell
Enjoy
