Suggest a better descriptionPreheat oven to 325 degrees. Coat a 9 inch quiche dish or deep dish pie plate with nonstick cooking spray; set aside.
Process cream cheese, 1 cup Mexican-style cheese, corn, tomatoes, sour cream, garlic and chili powder in food processor or blender until almost smooth. Stir in chicken by hand. Spoon mixture into prepared dish. Top with remaining 1 cup Mexican style cheese. Drizzle with olive oil. Bake for 45 minutes.
Garnish with toppings as desired. Serve with tortilla chips.
****Optional Toppings: sour cream, shopped or sliced black olives, diced avocado, sliced green onions or diced tomatoes.
