The best recipe, simple but delicious, for this comfort food.
1. Preheat oven to 350.
2. Use mandoline, if available, to cut potatoes into 1/8 inch slices.
3. Lightly butter a 2 quart shallow baking dish. Mix the two cheeses together.
4. In a small saucepan, heat cream, milk, garlic, salt & pepper over medium heat until small bubbles form around the edge. Remove from heat and let stand for at least 10 minutes.
5. Arrange the potato in overlapping slices along the bottom of the baking dish. Pour half of the cream and milk mixture over the potatoes and cover with half of the cheese mixture. Repeat with the remaining potatoes, cheese and cream mixture.
6. Bake 60 minutes until the top is a deep brown and potatoes are tender when pierced with a knife.
If you run out of cheese when covering the top layer, add a bit more.
