1.Reconstitute beef substitute.
2. Put the rice to boil.
3. Put chili powder, cumin, and salt in a zip-top bag. Add beef substitute and shake it up.
4. Heat oil in skillet. Add beef, cook until hot, about 4 minutes. Set aside.
5. Spray skillet with cooking spray. Stir fry the pepper mix until just tender. Add tomatoes. Cook 2 more minutes. Put beef substitute back in pan and cook through.
6. Serve over rice.
