Suggest a better descriptionHeat 1 tablespoon butter in 10 inch non-stick skillet on low. Beat eggs with ~1 tsp water, pour into skillet and season with salt and pepper. Cook slowly until set (only flip if needed) then cut into thin strips.
Heat oil in a wok and fry the garlic and minced serrano chile until beginning to turn golden. Add tofu and fry until brown. Quickly remove tofu and set aside, add chicken to wok, season with cayenne and stir-fry until cooked through. Add red bell pepper, asparagus and any additional vegetables, stir frying until almost cooked. Return tofu to wok then season with fish sauce and stir well. Add cooked rice, stir until uniform and cook until heated through.
To serve, squeeze lime over rice and to with egg strips and scallions or cilantro leaves.
