Of all the curries that Thailand has to offer, massaman is the most intriguing. Also spelt mussaman, this curry has a mysterious complex flavour due to the addition of woody spices to the usual fresh ingredients of lemongrass, galangal, chilli and garlic that form the base of a Thai curry. This recipe ticks all the boxes for a great massaman curry; the onion is cut into thick wedges, acting as a vegetable, along with the potato, as well as an aromatic, and the beef is slowly cooked until meltingly tender in both coconut milk and beef stock providing enough soupy broth to soak up the rice. The classic Thai flavours of sweet, sour, spicy and salty are represented by palm sugar, lime, chilli and fish sauce. Use this as a base and start playing around with your proteins, like lamb shanks, chicken or even duck or goat!
