I first tried this recipe out a week or so before Thanksgiving to see how it would come out. We invited some friends over and had a Friendsgiving, they knew they were going to be the Guinea pigs for this recipe. Everyone liked it so much that there was nothing left. I’ve been using this brine ever since and it has yet to disappoint!
Thaw out your turkey if it’s frozen. Combine all ingredients in a brine bag and put turkey in. Let it soak in brine for at least 24hrs. Take turkey out of the brine solution and pat dry. Next melt some butter and apply it all over the bird, this will add a nice color while in the smoker. You can smoke the turkey however you like. Here is what I do. Set smoker to 200° until the internal temp reaches 105°-115°. Then I’ll push the smoker temp up to 300° to get the internal temp of the breast or thigh to around 160°. Once it reaches temp, I’ll pull it from the smoker, wrap it in foil and lots of towels then put it in a cooler for 2-3 hours to rest. I use cherry or applewood and have been happy with the results. The longer the smoke the more smokey the flavor and the longer you can let it rest, the more juicy it can be. I hope you enjoy it as much as we do!
