Our favorite granola recipe. Can be made with whatever nuts and fruit you want.
Preheat ove to 350. Combine oats, coconut, pecans, salt and cinnamon in large bowl. Mix honey, vegetable oil and vanilla in large measuring cup. Add wet ingredients to dry and mix thoroghly. Spread on 2 large baking pans. Bake 20-25 min, stirring occasionally. Let cool on pans 10 minutes. Add dried fruit. Store in tightly covered container.
