After attempting many different pizza dough recipes and tinkering with rising/fermenting process, I think I've finally found one combination I'll repeat every time now!
-Mix warm Water, yeast, sugar, salt and olive oil in your Kitchen Aid Mixer with the paddle attachment.
-Add in flour 1 cups at a time until all the flour has been added. Combine with paddle mixer until all the ingredients have been equally incorporated.
-Remove the paddle from the mixer and attach your dough hook. Run the mixer for 6-8 minutes with the dough hook on your slowest setting. Every minute or two, turn off the mixer, remove the dough from the hook and then restart the mixer.
-Once the kneading process has now been completed, place your dough ball in a large, oiled plastic bowl. Roll your dough ball around to completely coat in oil, and cover with a damp towel.
-Leave to rise for 4 hours. the dough should have almost tripled in size.
-Deflate your dough and separate into 2 equal balls.
- Place each ball in a large 5 gallon zip lock bag, and place in the refrigerator and allow to sit overnight to cook the next evening.
- Remove dough from the refrigerator and hour and a half before you intend to cook your pizza.
-preheat your oven to 500 degrees with a pizza stone in the oven. Allow to heat up for an additional 5 minutes after it has completely preheated.
-Stretch dough out into a 14 inch pizza round on a pizza paddle or large cutting board. Be sure to put down plenty of flour or corn meal under you dough so it will easily slide off into the oven.
-Brush Olive oil on the crust of the pizza and add desired toppings.
-Pizza should cook in 8-10 minutes or when crust has reached deep golden brown.
The best timing I have found is to mix the ingredients when I get home from work in the evening, complete the initial rise and place in the frige before going to bed. Then taking the dough out after work the next day in the evening and making your pizza then.
