Tomato & Chilli Soup.
1 Sweat onion and garlic together in frying pan or wok
2 Blanch tomatoes, skin and de-seed
3 Chop up tomatoes and add to fried onion and garlic
4 Add chili, nutmeg, salt and black pepper to taste
5 Cook all the above until soft, add more of any of the ingredients until it tastes nice.
6 Leave to cool and liquidize
7 Add Passata
8 Heat the whole mixture until hot and thoroughly cooked, taste and if necessary add more of any of the ingredients to suit your taste
9 Add cream
10 Serve with crusty bread
If you need to thin it down a bit use vegetable or chicken stock
