1. Place flour, 1 tsp of salt, and butter in food processor & pulse 12 to 15 times, until butter is the size of peas.
2. Add egg yolks & pulse to combine
3. With motor running, add ice water and pulse until dough starts to come together.
4. Dump onto floured surface and roll into a flat dish. Wrap in plastic wrap and refrigerate for 30 mins.
5. Preheat oven to 400. Line sheet pan with parchment.
6. Place tomatoes in a large bowl.
7. To food processor add parsley, basil, garlic, thyme, 1 tsp salt, 1 tsp pepper until finely minced. Add olive oil while motor runs.
8. Pour mixture over tomatoes and toss gently.
9. On floured surface, roll dough out to 11 x 17 inch rectangle and transfer to pan.
10. Place second sheet pan directly on top of pastry and bake for 15 mins.
11. Remove from oven and take off top pan. Using fork, pierce pastry all over and bake for another 8 to 10 mins until lightly browned. Pierce any spots that bubble up.
12. Allow crust to cool 15 mins.
13. Lower oven to 375. Brush mustard on crust. Sprinkle thick layer of Gruyere on the pastry, reserving 1/2 cup. Sprinkle with 1/2 cup Parmesan.
14. Place overlapping tomatoes in rows on top. Don't add extra liquid
15. Sprinkle remaining Gruyere and 2 TBSP of Parm on top. Bake for 30 mins
