Heat a medium-size frying pan and add the oil, garlic, and mushrooms. Saute over medium-high heat for 3 minutes until the mushrooms are just tender.
Add the peas and prosciutto and saute for 2 minutes.
Add the cream and simmer 2 more minutes.
Boil the tortellini in a pot of lightly salted water until tender and drain well. Return the tortellini to the pot and add the cheese. Toss all together and add salt and pepper to taste.
Use more cream than specified. VARIATION: Another version of this dish omits the peas and mushrooms: Cream and prosciutto Tortellini. Simple and delicious.
