Put a little of the mixture in the bottom of the 13 X 9 pan.
Put a scoop of tow of mixture in each tortilla. Save some mixture to spread on top.
Sprinkle with cheese and then enchilada sauce.
Bake covered for approximately 30 min at 350.
Uncover and bake for 5 to 10 min more.
