Pour off yellow fat (KEEP 3/4 CUPS) of the fat (add melted butter to make 3/4 cups if needed)
Add turkey broth to skimmed rippings to 8 cups total;
Place roasting pan over 2 stove burners on low; Add 3/4 cups of fat.
Whisk in flour; If brown bits in pan - leave in.
Cook until lightly browned (about 2 minutes);
Whisk in turkey broth & (bourbon, port or dry sherry - opt)
Cook until thickened & no taste of raw flour (about 5 minutes). Add salt & pepper to taste.
