Preheat the oven for 350 degrees. Cut each squash in half lengthwise and scoop out the seeds. Drizzle squash with oil and spread it all over the exposed flesh so it is well coated. Sprinkle the flesh with sea salt. Place squash cut side down on a baking sheet and bake for 30 minutes, until squash is very soft when poked with a fork.
While squash is roasting, prepare stuffing. Put oil in a large skillet and heat to medium. Once the oil is hot, place the turkey in the skillet and brown 2-4 minutes. If using ground turkey, keep it in a solid brick if possible. Carefully flip to the other side and cook another 2-4 minutes. Use a spatula to break up the meat into smaller pieces, then add the chopped zucchini, ginger, and onion. Cover and cook 2-3 minutes until zucchini begins to soften. Add the remaining ingredients and cover again until spinach is wilted.
Stir well and continue to cook until the liquid is burned off, about 3-4 minutes. Once the squash is cook, generously stuff each half with the mixture and serve.
