Chop and sauté peppers and onion. Cook rice. Preheat oven to 375. Brown sausage, add vegetables, sauté for 2-3 min with seasonings, add rice and parm. Spoon into 4 prepped peppers, bake 20-25 min, remove, top with mozzarella, bake additional 10-15 min.
