Combine cranberries, sugar, water, and ginger in a small saucepan. Bring to boiling over medium-high heat; reduce heat to medium-low. Cook, uncovered, about 15 minutes or until thickened to the consistency of jam, crushing berries with the back of a spoon. Remove from heat; cool completely.
Punch down dough. Turn out onto a lightly floured surface. Cover and let rest 15 minutes. Line two baking sheets with parchment paper.
Roll dough into an 18 x 13" rectangle. Spread with cranberry mixture. Fold rectangle in thirds, like a litter, to create a 13 x 6" rectangle.
Cut rectangle crosswise into twelve 6" strips. Twist each strip and loosely tie into a knot, tucking ends under. Place on prepared baking sheets. Cover; let rise in a warm place until nearly double in size (about 30 minutes).
Preheat oven to 375. Bake about 15 minutes or until golden. Cool on baking sheets on wire racks, 5 minutes. Top with powdered sugar drizzle and, if desired, sprinkle with chopped pistachios. Serve warm.
