1. fill a large pot with water and add some salt -- boil
2. slice the green onions very thin
3. dice the garlic and ginger
4. put garlic, ginger, and half the green onions into a small bowl
5. put water, teriyaki sauce, and vinegar into a bowl or cup
6. add udon noodles to boiling water -- boil for 5 minutes
7. strain noodles, rinse with cold water, and strain again
8. heat oil in skillet
9. add the bowl of spices, and fry for 30 seconds
10. add ground beef, and cook (separating into small bits) until cooked (3 - 5 minutes)
11. add cup of liquid to skillet, and stir. Bring to a boil
12. add noodles and spinach, stir, until spinach wilts (1 -2 minutes)
13. sprinkle with remaining green onions and serve
