Suggest a better descriptionPeel and segment the fruits. Place the fruit segments in clockwise fashion on a plate. Whisk the yolks, sugar and cardamom to ribbon stage over gentle heat. Add the Tia Maria and allow to rest until cold. Fold in the whipped cream and pour over the segments. Colour under the grill (or use a gas torch). Garnish with coconut strips and mint hearts.
