Suggest a better descriptionSoak beans if necessary (1 hour in boiling water). Drain and place in soup pot with water and ham hock. Bring to a boil. Reduce heat and simmer 1 hour and 15 minutes. Remove the hock. Discard bone, skin and fat. Return to pot with all other ingredients. Simmer 20 to 30 minutes. Remove from heat and mash until slightly creamy.
