Spread cubed sweet rolls in a single layer on one to two baking sheets and bake for 15 minutes, until lightly golden. Stir once or twice.
Meanwhile, in a large skillet, melt butter; reserve 3 tbsp of the melted butter.
Add the apples and 1/4 cup of the sugar to the skillet and cook over medium heat, stirring occasionally, until the apples are golden and softened, about 15 minutes. Stir in the cinnamon.
Remove from heat, add brandy, return skillet to heat and cook until the sauce is syrupy, about 1 minute.
In a large bowl whisk eggs, milk and the remaining 3/4 cup of sugar.
Add vanilla beans (split and scraped), toasted sweet rolls and apples to the egg mixture; stir thoroughly. Let stand for 5 minutes to allow the bread to absorb the custard.
Brush an 8 by 11 baking dish with 1 tbsp of the melted butter.
Add the bread pudding and drizzle the remaining butter on top.
Bake for about 50 minutes, until the custard is set and the top is golden. Let it cool slightly serve with vanilla bean whipped cream if desired.
