vanilla cookies that can be filled with stuff to make sandwich cookies
Whisk the flour, baking powder, baking soda, and salt in a medium bowl.
Combine the butter, 1-1/4 cups sugar, and brown sugar in a large bowl. Beat until creamy. Beat in the egg, yogurt and vanilla. Add the flour mixture and mix until blended. Cover the bowl and refrigerate for 45 minutes, until the dough is chilled enough to handle.
Preheat the oven to 375. Line two baking sheets with parchment paper.
Put the 1/3 cup sugar in a small dish. Shape the dough into balls the size of large walnuts and roll them in the sugar. Place the balls 3" apart on the prepared baking sheets. With a small glass, press down on each dough ball until it's about 1/4" thick.
Bake for 8-10 minutes, just until the cookies start to turn light brown at the edges and are dry to the touch but still soft in the middle.
Let the cookies cool on the baking sheets for a minute or two. Lift off the parchment paper with the cookies still on it and place on a countertop to cool quickly. When the cookies are firm, remove with a spatula. The cookies are best if used as soon as possible after baking.
